Just A Bakery is co-owned by Moldovan-born sisters Marina Sepenuk and Valentina Mantsevich, who lived in Moldova for seven years before moving to Siberia; in , they moved to Pennsylvania. The sisters then found themselves moving to California shortly afterward and finally, in , the sisters moved to their current home of Cleveland. Mantsevich moved to America in , with Sepenuk and the rest of the family moving here in Cleveland was special to their father, as he loved the overall Christian environment of the South.

The sisters explained that opening their own bakery in Russia would not have been possible due to the tough economic conditions during the transition from one government form to another. The sisters point out one facet of the business that they find interesting: The interest in baking stems to their brother, who was getting married in and needed a cake — and someone to bake it. Their brother wanted a very specific look and flavor, so after searching for different bakers, the sisters decided to give it a go themselves.

As Christians, the sisters decided to give Sundays and Mondays to God, and therefore keep the bakery doors closed on those two days. Some of their most loyal customers include Lee University students, whose proximity to the bakery and its free Wi-Fi allows them premium access. Both said their favorite thing is when customers come to them with something beyond even their own imaginations. We had never done that before! While the Museum Center wanted a basic house, we both took inspiration from the Lee University chapel, which is what we ended up using as our model for the gingerbread house, and they were so pleased with the finished product!

Another requested item was a buche de Noel, a French cake in the shape of a Yule log. It was a new, but welcome, sight to the sisters. We have improved by listening and adapting our products to the needs of the community.

Mantsevich explained how they would bring pastries to their Tennessee church functions, taking note of which ones were eaten and which ones tended to stay on the serving table. They would then focus more on the popular dishes in the future. Mantsevich and Sepenuk operate the bakery, along with their other sister who helps occasionally when possible. The sisters said they are happy to be involved in the community and hope to grow their business even more in Just A Bakery is open Tuesday through Saturday, from 10 a.
